Abstract

In the article, the authors consider one of the largest and rapidly growing dessert markets, namely ice cream. They analyze the stages of market development, study in detail the state of the markets in North America and European countries, the role of leading corporations, the changes in exports and imports of ice cream, and highlight that as a result of the struggle for a buyer, firms have turned the market from the sphere of sales of children’s dessert into a large segment of the global market of dessert for adults. The authors consider structural shifts in the global ice cream market under the changing consumer tastes.
